Soup – of any kind – is brought to the table in a tureen and served over slices of rustic bread. When the bread is saturated, it is said that the soup is “trempée”. Once the bread has been eaten, red wine is poured into the remaining stock, in an equal quantity to the stock. The liquid is then sipped directly from the bowl. Try it… And enjoy !
